I was feeling adventurous one day and decided that I would like to attempt cookie baking at a different level. So I looked for these speculoos stuffed cookies recipe and it was a path of no return. 

If I had also included caramel inside, it would be a gooey, sticky mess of yumminess. But I decided that was too much adventure for one day, so for now, speculoos only. Still very yummy. 

This recipe is a little time consuming because of the extra effort to have encase the speculoos inside the cookie, but it was well worth the effort. Just google the recipe, you can find many variations of it online, just use the one you're most comfortable with.
